2 ½ pounds very ripe tomatoes, seeded
4 cups vegetable juice
1 cup seeded diced cucumber
1 cup diced green bell pepper
1 cup diced red bell pepper
½ cup diced yellow onion
1 green onion, finely chopped
¼ cup fresh lime juice
2 tablespoons finely chopped Italian flat-leaf parsley
2 tablespoons chopped fresh cilantro leaves
1 teaspoon Garlic Paste or minced garlic
1. Roughly chop tomatoes in food processor.
Transfer to large bowl.
2. Stir in remaining ingredients. Cover; refrigerate until chilled.
Yield: 10 cups
Note: This recipe provides a great way to use a surplus of fl avorful garden-grown or farmer’s market tomatoes. Supermarket varieties are not recommended.
