In addition to being my favorite time of year (actually, every time of year seems to be my favorite!), springtime at the Heartland is exceptionally magnificent. Maybe it's watching the snow melt and seeing the beautiful green grass start to emerge. Or, perhaps it's the gorgeous flowers that come to life throughout the property. It might be the sweet sounds of birds chirping or the peaceful way that the lake captures the reflection of the sun. Or, maybe it's as simple as the fresh, clean country air that makes me realize just how lucky I am to come to The Heartland each and every day!

If you've never experienced The Heartland in spring, I hope you'll consider it! Many of our guests only vacation with us in March and April for the reasons I've mentioned above. After being trapped indoors during the cold, dreary winter months, there's nothing like a visit to The Heartland Spa to make you feel happy, vibrant and full of energy.

Meet Kim Onnen, MS, Assistant Director, Fitness Manager

KimKim has been with the Heartland Spa and Fitness Resort for eight years and has built a loyal fan base!  Highly credentialed, Kim has a Masters Degree in Exercise Physiology, a Bachelors Degree in Elementary Education, is a Certified Health and Fitness Specialist through ACSM (American College of Sports Medicine) and is also a Certified Yoga Instructor. Kim absolutely loves what she does!  It’s evident in the unique way in which she teaches her classes, nurtures her students, and focuses on every guest’s individual needs. Of greatest importance to Kim is her desire to help Heartland visitors make healthy positive changes that will last a lifetime.

Recipe Corner

Chef Barb's Angel Food

Spring is in the air, and so is the delicious aroma of Chef Barb's Angel Food Cake! This scrumptious, low-fat recipe can be tweaked for St. Patrick's Day by adding a dash of "green." Enjoy!

Ingredients:
1 cup sifted cake flour
1 cup sugar
12 large egg whites (about 1½ cups), at room temperature
1 teaspoon cream of tartar
1 teaspoon vanilla extract
½ teaspoon almond extract

Directions:
1. Preheat oven to 350°.
2. In small bowl, combine flour and ½ cup of the sugar; sift together twice.
3. In large bowl of electric mixer, beat egg whites at high speed until foamy. Gradually add cream of tartar and the remaining ½ cup sugar, beating until mixture forms soft peaks. Beat in extracts.
4. Gradually fold sifted flour-sugar mixture into egg white mixture.
5. Pour batter evenly into ungreased 10-inch tube pan.
6. Bake 40 minutes or until toothpick inserted halfway between center and outside edge comes out clean.
7. Invert pan and cool cake upside down to retain puffiness and shape. When cooled completely, remove cake from pan to serving plate.

Yield: 12 servings

Calories: 114, Fat: 0 g (1% calories from fat), Protein: 4 g, Carbohydrate: 24 g, Cholesterol: 0 mg, Sodium: 50 mg

Editor's Note: In celebration of St. Patrick's Day, you can make the cake green by adding 2 tablespoons of Matcha (green tea powder).

So ditch the winter blues and grab a sweatshirt…it's time to get motivated, and start moving!

If you're a guest of The Heartland, you're already on your way. Did you know that every day at The Heartland Spa and Fitness Resort starts with a morning walk? That's right! Rain or shine, everyone is invited to join one of our fitness staff members for an invigorating 2-mile walk. Walking is among the easiest exercise to do because you don't need any equipment other than a pair of good support sneakers. Not only does walking increase your level of fitness, but it also has been shown to reduce stress. Researchers have also found that walking in springtime is especially beneficial because it tends to brighten your mood.

So, c'mon, get happy…start a walking routine today!
