Giving Thanks
Where does the time go? How can it be that another year will soon come to an end? With Thanksgiving right around the corner, I encourage you to stop, take a deep breath, look around, smell the roses, and remember all that you have to be thankful for! It may sound contrived and trite, but I count my blessings each and every day. Really, I do! I've got a wonderful family, supportive friends, my health, a roof over my head, and a job that I truly love. I feel blessed and extremely grateful to be part of The Heartland. My staff and I are committed to making The Heartland experience the best it can be, and I am thankful to you, our loyal guests, for making us your home away from home. Thanksgiving Favorites - Heartland Style!
We hope you'll try two of our favorite Thanksgiving recipes. Let us know how much you and your family enjoyed them!
Pumpkin Soufflés

Pumpkin SouffleIngredients:
Granulated sugar
1/2 cup fat-free (skim) milk
1 1/2 teaspoons cornstarch
11/2 teaspoons finely chopped crystallized ginger
1/3 cup canned pumpkin
1/4 teaspoon vanilla
1 1/2 teaspoons organic raw sugar* or brown sugar
1/4 teaspoon grounded cinnamon
1/8 teaspoon ground cloves
*Organic raw sugar is available at most health food stores under the name Sucanat.

Preheat oven to 375º. Lightly spray 6 ramekins with vegetable cooking spray. Sprinkle insides of dishes with granulated sugar; shake to lightly coat. Invert dishes and tap bottoms lightly to remove excess sugar. In medium saucepan, add milk to cornstarch; stir until well blended. Bring to a boil over high heat. Remove saucepan from heat; stir in ginger. Pour into large bowl; set aside to cool. Add pumpkin, vanilla, organic sugar, cinnamon and cloves; mix well. In medium bowl, beat egg whites at high speed of electric mixer until soft peaks form. Beat in 11/2 teaspoons granulated sugar. Fold into pumpkin mixture. Spoon evenly into prepared dishes. Bake 15-20 minutes or until set in centers. Remove to wire racks to cool completely.

Yield: 6 servings. Per serving: Calories: 33; Fat: 0 g (2% calories from fat),
Protein: 3 g, Carbohydrate: 4 g, Cholesterol: 1 mg, Sodium: 47 mg

CornbreadThis low fat cornbread is particularly wonderful when served warm. Enjoy it at Thanksgiving or have some ready the next time you make a batch of chili!

1 cup yellow cornmeal
1/2 cup whole wheat flour
1/2 cup all-purpose flour
1/4 cup sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 egg, lightly beaten
1 1/4 cups low fat buttermilk
2 tbsp canola oil

Preheat oven to 350 degrees. Spray an 8-inch square glass baking dish with nonstick cooking spray.
In a large bowl, combine cornmeal, flours, baking powder, baking soda and salt. In a separate bowl, whisk egg, buttermilk and oil. Add wet mix to dry and stir until just moist. Empty batter into glass dish and bake until lightly golden and until the top springs back slightly when pressed-about 25 minutes. Cool for a few minutes, and serve while still warm.

Yield: 16 squares. Per serving: Calories 96, Calories from Fat 23,
Total Fat 2.6g (sat 0.3g), Cholesterol 14mg, Sodium 133mg, Carbohydrate 15.7g, Fiber 1.2g, Protein 2.5g

During this time, we paint the guest rooms, shampoo all the carpets, drain and clean our indoor pool, and do everything necessary to make sure that The Heartland is in tip-top shape for the New Year!
