Recipe Corner - Lemon Raspberry Cookies

3/4 cup butter
1 cup brown sugar
1 whole egg
3 tablespoons egg white
1/4 cup lemon juice
3 1/2cups unbleached flour
2 1/2teaspoons baking soda
1/3 cup white chocolate chips
1/2 cup raspberries
1. Preheat oven to 350°.
2. Cream together the butter and sugar. Add the eggs and egg whites in stages. Mix in the lemon juice and zest.
3. Combine the flour and baking soda. Mix the dry ingredients into the batter.
4. Mix in the white chocolate chips.
5. Fold in the raspberries
6. Portion the cookies and bake for 7-10 minutes.
