Apple-Cinnamon Crepes

Yield: 6 Servings

¼ Cup organic raw sugar* or firmly packed brown sugar
1 Tablespoon cornstarch
1 Tablespoon ground cinnamon
¾ Cup apple cider
1 Teaspoon vanilla
2 ¾ Cups sliced, peeled tart green apples (such as Granny Smith)
6 Crepes

*Organic raw sugar is available at most health food stores under the brand name Sucanat.

In medium saucepan, combine sugar, cornstarch, cinnamon, apple cider and vanilla; stir until both the sugar and cornstarch are dissolved completely.

Bring apple cider mixture to boil over medium-high heat, stirring frequently.  Reduce heat to low; simmer until mixture is clear and thickened, stirring frequently. 

Add apples; cook, stirring occasionally, until apples are heated through.

Spoon apple mixture evenly down centers of unbrowned sides of open crepes; fold edges over filling.  Place crepes, seam sides down, on dessert plates.  Garnish as desired.  Serve immediately.
