Chicken Roasted on Eggplant & Tomatoes
Yield: 4 Servings
1 Eggplant, sliced ½ inch thick
2 Roma tomatoes, sliced ½-inch thick
1 Tablespoon oregano
4 6oz Chicken breast halves without skin
½ Cup grated Parmesan cheese
½ Cup Mozzarella cheese, part skim milk, grated
Preheat oven to 350
Lightly coat a baking tray with cooking spray.
Place the eggplant slices on the tray and top with the tomatoes, oregano, salt, and pepper.
Top each slice with a chicken breast and sprinkle with the Parmesan and mozzarella.
Bake for 20 minutes or until the cheese is golden and the chicken cooked through.
