Spiced Rice Pilaf
Servings: 4

¼ Cup onion, diced
¼ Teaspoon ground cinnamon
2 Teaspoons butter
¼ Cup brown rice
¼ Cup wild rice
¾ Cup chicken stock
¾ Cup water
¼ Cup dried apricot, sliced
2 Tablespoons sliced almonds, toasted
2 Tablespoons fresh parsley, chopped

  1. Sauté onion and cinnamon in butter in a large sauté pan over medium heat until soft.
  2. Add brown and wild rice, and cook 2 minutes, stirring frequently.
  3. Stir in stock and water, and bring to a boil.  Reduce heat to low, cover, and cook until rice is tender and all liquid is absorbed, 1 hour.
  4. Stir in apricots, then cover and let stand off heat until fruit has softened, 10 minutes.  Stir in almonds, parsley, and salt to taste.
