Spicy Banana Cookies
Yield: 4 ½ Dozen
¾ Cup all-purpose flour
¾ Cup whole wheat flour
¾ Teaspoon baking soda
¼ Teaspoon salt
2 Teaspoons ground ginger
¼ Teaspoons ground cinnamon
1/8 Teaspoon ground cloves
1 Banana, peeled
¾ Cup granulated fructose* or granulated sugar
1 Egg, slightly beaten
3 Tablespoons molasses
*Fructose is available in most health food stores
Preheat oven to 350. Cover baking sheets with parchment paper or grease lightly.
In medium bowl, combine flours, baking soda, salt and spices.
Mash banana in large bowl. Blend in fructose, egg and molasses. Mix in flour mixture. Spoon tablespoons of dough, 2 inches apart, onto prepared baking sheets. Bake 10-12 minutes or until golden brown. Remove to wire racks to cool completely.
